Ethiopia Guji Chebega Washed
This Guji is a balanced coffee with delicious dark chocolate, almond and red apple notes.
I normally wouldn't recommend drinking Ethipiopian coffees with milk, but this one really works with milk as well if you like your coffee with milk.
About the Origin:
This lot is sourced from the heart of Ethiopia's Guji Zone, Uraga district, specifically in the village of Harowacho, founded 14 years ago by Bisrat Melaku.
The coffee is sourced from high altitude areas sounded by mountain Quto, where the river Seboba crosses, making it an ideal environment to harvest and process high-quality coffee.
The farmers, consisting of 40-60 individuals and 400-500 coffee pickers, deliver their ripe cherries to the Harsu sala washing station, where they undergo a series of steps to ensure quality. The cherries are sorted by grade using density channels, fermented for 72 hours, washed and checked for defects before being placed on raised drying tables for 5-8 days.
Brew ratios:
- Filter / Pour Over: 1:15 (1gram of coffee for 15 grams of water - or 30g of coffee for 450g of water)
- Espresso: 21g in / 40 - 42g out, 30 - 34 seconds
